Goat Cheese and Mango Quesadillas

This quesadilla is full of delicious flavor!!! It may sound odd, but the sweet of the mango competes with the spicy of the jalepeno to make a perfect combination. Serve this for dinner, as an impressive appetizer at a dinner party, or snack food on game day.













Ingredients:
4 ounces fresh goat cheese
6 whole wheat tortillas
1 large ripe mango, peeled, pitted, and sliced
1/2 small red onion, thinly sliced
jalepeno as desired
fresh cilantro leaves as desired

Directions:
Spread goat cheese on tortillas
Divide mango, onion, jalepeno, and cilantro evenly
Fold tortilla in half for mini quesadilla, or add another tortilla on top for a dinner sized portion
Heat in a large skillet over medium-high
Cook until cheese softens and tortillas are crisp
Transfer to cutting board, cut into wedges, and serve!

  1. Honestly, I can't stand the taste of goat cheese. But the recipe looks amazing, I would just substitute pepper jack for goat cheese in my recipe. To each is own. Good luck with your blog and Congrats on your wedding.

  2. Tried this out today for lunch. Didn't have fresh mango on hand, but did have a chunky mango salsa. It was great, keep up the good work girl!
