Black Bean Chili

As far as veggie chili goes...this one absolutely takes the cake! Even meat eaters will love this! It's a healthy and tastey alternative to regular chili and is simple to prepare.







Ingredients:
1 tablespoon olive oil
1 small onion , diced
2 garlic cloves , minced
salt and pepper
2 zucchini , halfed lenthwise and thinly sliced
1 tablespoon chili powder
1 teaspoon cround cumin
2 cans black beans , rinsed and drained
1 can crushed tomatoes
1 package frozen corn kernels , thawed
1 cup water

Directions:
In a heavey pot, heat oil over medium-high. Add onion and garlic; season with salt and pepper. Stir occasionally until beginning to soften.
Add zucchini, chili powder, and cumin. Cook for 5-6 minutes. Add beans, tomatoes, corn and water. Simmer until slightly thickened...about 10 minutes.

Additional toppings:
Shredded cheese
Scallions
Sour cream
Diced avocado
Tortilla chips
