Stuffed Potatoes

At only 218 calories, this is a healthy take on stuffed potatoes. But butter can be added for extra flavor!

Ingredients :
4 large baking potatoes
One 10 ounce package frozen chopped spinach (thawed and drained)
1/4 cup milk
1 scallion
1/2 cup crumbled feta cheese

Directions :
Bake or microwave potatoes until done, then cut in half length wise. Scoop out the inside of each potato half, but remember to leave a sturdy shell.
Transfer the scooped out potato to a mixing bowl and mash it.
Add the remaining ingredients to the bowl and stir well.
Spoon out mixture and stuff into potato shell.
Heat in microwave or in a preheated oven as needed.
